Sundal is a snack made of all kinds of lentils. Some are sweet, some savouries. It's a perfect snack for all seasons; come rain or sunshine, binge on a cupful of sundal, for it's healthy too!
500g cowpea (vanpayar) or green gram (cherupayar)
Half a coconut, grated
½ tsp cardamom powder
Salt to taste
3 tsp ghee
Cook cowpea/green gram with salt until it is nicely cooked.
Melt jaggery until it forms threads when poured.
Add cooked cowpea/green gram, coconut and cardamom powder. Mix well.
Add the ghee at last once the mixture has cooled. Serve warm.
