Wafer thin Vellayappam with Liver Fry

It's all food for the Bakrid spread, and the season has the best to offer in this regard. Try this combination of wafer thin vellayappam and liver fry, and be floored.

Ingredients

For Vellayappam

1 glass, Ponni rice
½ glass, raw rice/Kaima rice
1 egg
Salt, as required
Ghee, as required

For Liver Fry

½ kg goat liver
2 onion, sliced fine
1 tomato, sliced fine
1 tsp ginger, sliced fine
1 tsp garlic, sliced fine
3 tbsp chilli powder
½ tsp turmeric powder
Salt, as required
Oil, as required
2 sprigs curry leaves

Preparation

To make Vellayappam

Mix the Ponni rice, raw rice/Kaima rice and wash thoroughly. Soak it in water and grind it well
Add egg and salt to this, and beat it well. Make a batter from it and keep it aside
Take a big frying pan and heat it. Pour a spoon of batter into this and turn the pan in a round shape. Do not spread it with the spoon. It must be light
When the appam gets cooked, remove it from the pan with your hand and spread ghee on top of it. Fold it into 4
While serving, you can place one on top of each other
You can make wafer thin vellayappam without adding egg as well

To make Liver Fry

Chop the liver into tiny pieces, clean them and cook along with onion, tomato, ginger, garlic, chilli powder, turmeric powder and salt
Heat oil in a pan and add the curry leaves. Put in the cooked liver chops and fry them well
Once done, take off the stove and have it hot with wafer thin appams
