Sakkarai puttu

This isn't the cylindrical puttu found widely in Kerala. Although it's called puttu, it's crumbly, spread out, and mixed with jaggery, and is quite a different experience altogether. One of the main offerings for pooja during Navaratri, sakkarai puttu (jaggery puttu) is the season's favourite!

Ingredients

500g well roasted rice flour
750g jaggery
2 coconuts, grated
1 tsp cardamom powder
100g coconut diced and roasted in ghee
150g ghee:
1 tsp turmeric powder
Salt to taste
50g cashews fried in ghee 

Preparation

In warm water, add turmeric powder and boil. Add the rice flour with salt and pour the water little by little into the mix until you make it into a thick batter as you would to make the cylindrical puttu.
Steam-cook the puttu mix (you can use the cylindrical or round puttu maker).
Melt jaggery until it reaches a consistency where threads are formed when poured.
Reduce flame and add the cooked puttu, grated coconut, ghee and mix well. Take out of flame, add cardamom powder, diced and fried coconut and cashew. Mix well and serve.
