Red velvet cake

Add more red to this Valentine's Day with this super luscious red velvet cake.

Ingredients

2 ½ cups sieved maida

2 tbsp cocoa powder

1 cup yogurt

2 tsp red food color

½ cup butter

1 ½ cup sugar

2 large eggs

1 tsp vanilla essence

1 tsp white vinegar

1 tsp soda bicarbonate


For the frosting


225gm softened cream cheese

225gm softened mascarpone cheese

1 tsp vanilla essence

1 cup sieved icing sugar

1 ½ cup cold heavy whipping cream


Preparation

Pre-heat oven to 180 degrees

Grease cake tin with oil and sprinkle some maida

Sift together maida and cocoa powder in a mixing bowl and keep aside

Mix yogurt and food color in another bowl, beat well until no lumps remain and keep aside

Whip butter in a large mixing bowl. Mix sugar to it and beat well. When it becomes fluffy, add eggs one after the other and beat to blend well

Add vanilla essence and blend with the mixture

Reduce the speed of the mixer, add maida mix and beaten yogurt to it and stir

Mix vinegar and baking soda in a small cup. As soon as it leavens, add to the cake mix and gently stir

Immediately pour and spread it in the cake tin and bake for 25-30 minutes in the preheated oven

Once the cake is baked, take it outside. After it cools down, wrap it in a plastic film and keep in fridge. The cake is refrigerated for easier frosting

For preparing the frosting, add cream cheese and mascarpone cheese in a bowl and mix well

Add vanilla essence and icing sugar to it. Beat well until it softens

Add cream little by little to it and beat well

It should solidify enough for it to be smeared on the cake. Add more sugar and cream if needed

For setting the cake, take out the initially prepared cake from the fridge and cut across it horizontally. Spread a layer of frosting above the bottom layer

Place the next layer cake above it and cover the entire cake with frosting
