Pulao or Pilaf has become an inseparable addition to the repertoire of the Indian kitchens. This is an easy way of dishing up some tasty pulao.
2 cups of Basmati rice
1 cup green peas (fresh)
1 dsp ghee
3 one-inch pieces of cinnamon
5 cups of boiling water
Salt to taste
¼ tsp turmeric powder
Sort,clean, wash and soak the rice for about 1 hour and drain
Heat ghee in a pan and fry cloves and cinnamon. Add the drained rice and fresh peas Raise the temperature and saute slowly without breaking the rice
Pour boiling water over the rice. Add salt to taste and turmeric powder
When the water resumes boiling, cover the vessel with a light lid
Lower the flame and cook slowly till all the water is absorbed and the rice and peas are cooked completely
Par-cooked peas can be used. Add the peas when rice appears three-fourth cooked.
