potti-saar

Jackfruit seeds, drumsticks and mango cooked together, flavored with green chillies, coconut and coconut oil, served as an excellent accompaniment in traditional Kerala sadya.

Ingredients

100g jackfruit seeds
120 gms drumstick
200g mango
½ tsp turmeric powder
Salt as required
1 tbsp chilli powder
1 tbsp green chillies
80g grated coconut
25 ml coconut oil
1 sprig of curry leaves

Preparation

Roughly chop the jackfruit seeds, cut the drumstick into two inch long batons and cut the mango into small cubes
Mix the above ingredients together with turmeric, chilli powder and salt
Add sufficient quantity of water and boil till the jack fruit seeds are cooked
Make a paste of green chillies and grated coconut and add to the gravy
Bring to a boil and remove from fire
Add fresh coconut oil and curry leaves
Check the seasoning and serve garnished with fried curry leaves

(In arrangement with Hilton Garden Inn, Thiruvananthapuram)

Notes

It is of pouring consistency; the amount of gravy to the vegetable content is very less
