papaya-stir-fry

A treasure trove of goodness, the papaya stir fry with subtle flavouring is just the thing for this Karkidakam.

Ingredients

½ kilo raw papaya chopped into small pieces
2 tbsp oil
¼ tsp mustard seeds
1 handful of crushed shallots
5-6 cloves crushed garlic
1 sprig curry leaves
¼ tsp red chilli powder
Salt for taste

Preparation

Wash the papaya and drain well 
In a wide pan, heat oil and splutter some mustard seeds
Sauté the shallots and garlic
Once the raw smell disappears, add the curry leaves and red chilli powder to it
To this, add the papaya and cook on low fire for 3 to 4 minutes with a closed lid 
Once the steam rises, open the lid and stir fry
