Duck Oolarthiyathu

Marinated duck cooked to perfection, this is the spicy exuberance that you've always wanted in your kitchen!

Ingredients

500g pieces of broiler duck
1 tsp vinegar
2 dsp oil 
1 tsp mustard
2 sprigs curry leaves
1 cup large onion cut into fine pieces
Salt to taste
1 tsp ginger cut finely
1 dsp red chilli powder
2 dsp coriander powder 
1/2 tsp turmeric powder
2 tsp garam masala powder

Preparation

Put the duck pieces into a pressure cooker, preferably a 2 litre cooker
Marinate the meat with turmeric powder, garam masala, coriander, chilli, salt, vinegar and ginger. 
Mix well so that the ingredients coat the meat well.
Once the meat is well marinated, cook it in the pressure cooker.
After the first whistle, low flame to a simmer.
Cook the marinated meat in the cooker for 30 mins and then keep aside.
Heat a frying pan, pour oil and splutter mustard seeds in it.
Add minced onions and curry leaves and sauté.
When the onion is sautéed, add the cooked meat, mix well and cook for a few minutes and remove from flame. Serve.
