Beetroot Stir fry

The benefits of Beetroot are many. And it also stays true to the adage, good food can be tasty too; with a rich supply of antioxidents and proteins, this vibrant jewel-like vegetable can sure grab attention.

Ingredients

1 cup beetroot cut long, 2 inch thick and boiled
3 dried red chillies
¼ cup shallots cut lengthwise
¼ tsp ginger julienned 
Salt and pepper, as required
1 tbsp coconut oil

Preparation

In a pan heat the oil and add the red chillies, shallots and ginger
To this, add the beetroot with a little salt
Close lid and simmer for some time
Once the steam escapes, open the lid, add some pepper and stir well. Remove from fire
