A variant of our parippu vada (dal vada), aama vada is a crispy deep fried lentil-snack best enjoyed in the monsoons and winter, one cruncy, delicious bite at a time! It is also an offering made during the Navaratri festival.
250g split bengal gram/chana dal
20g black gram
8 dried red chillies
1 tsp asafoetida
1/4 cup coconut pieces, diced
5g ginger cut to small pieces
A few sprigs of curry leaves
A few sprigs of coriander leaves
Coconut oil to fry
Salt to taste
Soak split bengal gram and black gram for half an hour.
Drain, add chillies and salt and run in a mixer until a coarse batter is formed. Add the remaining ingredients to the batter and fry small quantities in oil.
