Apricot Cream

All sweet stuff becomes decadent when they are jazzed up with indulgent, meltinthe mouth gooey condensed milk. Here are a bunch of recipes from Ramla Nadukkandi from Kozhikode and Annu Ididkkula from Kochi that is sure to satisfy your sweet tooth.

Apricot Cream

Send guilt on a holiday as you indulge in this lovely dessert.

Ingredients

400 gm Apricot
3 oranges
1 tbsp sugar
Yolks of 6 eggs
1 tin condensed milk
1 ½ litre milk
2 tbsp cornflour
1 cup grated chocolate
Whites of 6 eggs
A pinch of salt
½ cup powdered sugar
4 tsp gelatine
1 ½ cup fresh cream

Preparation

Soak apricots overnight. Remove the stone and mix well with some water, juice from the 3 oranges and 1 tbsp sugar. Pour this mixture into a Pyrex dish.
Preheat oven to 180°C.
Prepare a custard stirring egg yolks, condensed milk, milk and cornflour and pour over the apricot mixture.  Place this Pyrex dish in an ovenproof dish filled with water and keep this together in the preheated oven. Bake for 30 minutes till set.
Remove the dish from the oven and allow it to cool. Now sprinkle grated chocolate all over the pudding surface.
Now whisk egg yolks, salt, powdered sugar and gelatine together. Beat cream well and add to the egg yolks and top the pudding with this using a spoon. Refrigerate till set.
Garnish with the remaining chocolate shavings just before serving.
