Roasted pumpkin seeds

It's a month of festivities and you are officially broke. We understand. Pistachios are too expensive. Cashew nuts are off the menu. Groundnuts are your only option to nibble on, not a very cool one, though. Don't worry. We have the next best solution – roasted pumpkin seeds, the tiny flat nutrition powerhouses you have been throwing away all the while you make a pumpkin curry or payasam. Wash them, toss some salt and roast them, cute and crunchy munchies are ready.

Ingredients

Seeds of a whole pumpkin

3 cups water

2 tbsp olive oil

Salt as required

Preparations

Place the seeds in a colander and rinse using running water to clean them
Boil water in a saucepan
Add the pumpkin seeds and salt to the pan and keep it boiling for 10 minutes
Drain the seeds
Heat a pan and toss the seeds in it
When the water on the seeds evaporates, add the olive oil
Stir continuously till the seeds turn light brown in color
Remove the pan from the stove and let the seeds cool before eating
Tip: Sprinkle some garam masala while roasting the seeds if you want to spice it up
