Mexican Chicken

Don your gourmet apron to make this exotic chicken!

Ingredients

1 kg boneless chicken
Juice of 4 lemons
1 tsp rosemary
1 tsp cumin powder
2 tsp paprika or Kashmiri chilli powder
Salt to taste
250 gm refined oil
4 tsp garlic, chopped fine
6 to 7 onions, chopped fine
2 tsp dry red chillies, crushed
1 kg tomatoes
200 gm red capsicum, cut into rectangular pieces
200 gm green capsicum, cut into rectangular pieces
1 tsp rosemary
1 tsp cumin powder

Preparation

Clean chicken and marinate with lemon juice, rosemary, cumin powder, paprika and salt.
Heat some oil in a nonstick pan, add chicken and grill it on medium heat.
Heat oil in another pan and sauté onion and garlic.
Add paprika and crushed dry red chillies to this.
Blanch tomatoes and puree them. Strain the puree and add it to the sautéed onions and garlic. Cook on medium heat till the gravy thickens to a sauce like consistency.
Now add capsicum and grilled chicken to this and cook for 2 minutes.
Finally add cumin powder, rosemary and remove from heat. Serve with tomato rice or Mexican tortillas.
