Enchiladas con pollos

Tortillas stiffed with meat or vegetables and baked with spicy sauce. This item is available even in the wayside eateries in Mexico.

Ingredients

8 tortillas (about 7€ diameter)
2 tbsp oil
Enchilada sauce, to taste
Chicken cheese filling as required
Sour cream to taste

Enchilada Sauce
2 tbsp vegetable oil
1 onions, chopped
3 ½ cups tomato puree, made from skinned tomatoes
7 pods garlic, chopped
4 tbsp red chilli powder
½ tsp cumin, powdered
¼ tsp oregano
1 tsp salt

Chicken Cheese Filling
1 packet chicken breast, boneless
Salt and water as required
1 tbsp oil
1 large onions, chopped
1 capsicum, chopped
½ tsp oregano
½ tsp basil leaves
2 ½ cups grated cheese

Sour cream
1/3 cup milk
2 tsp lemon juice
2 tbsp grated cheese
1 cup cottage cheese
¼ tsp chilli powder

Preparation

Heat oven to 350 0 F Heat oil in a pan and fry the tortillas for 12 seconds.
Brush a heavy coat of enchilada sauce on one side of the fried tortillas.
Place the tortilla on a dish and over the sauce spread out ¼ cup of chickencheese filling. Over this place the cheese filling.
Now roll the tortilla and place on the baking pan so that the opening is at the bottom.
When all your tortillas have been arranged on the dish pour the remaining sauce over them.
Bake in oven for 1520 minutes.
Serve with sour cream.

Enchilada Sauce
Heat oil and sauté the onions till they turn translucent.
To this add the tomato puree and garlic.
Slowly add in the red chilli powder, cumin, oregano and salt. Cover and cook on a low flame. Keep stirring in between. When the sauce thickens, remove from fire.

Chicken Cheese Filling
Cook the chicken with salt in enough water. When it cools cut to 8 long and large pieces and keep aside.
Heat oil in a pan and sauté the onions, capsicum, oregano, basil leaves and grated cheese. When the capsicum has sautéed well, remove from fire.
Place one piece of chicken in the centre of an enchilada sauce spread tortilla and over this 1 tablespoon of sautéed onions followed by grated cheese.

Sour cream
Combine the milk, lemon juice, grated cheese, cottage cheese and chilli powder and grind well.
