Chicken Quesadilla

The quesadilla is one of the most favourite dishes of Mexicans. Queso means cheese and quesadilla means tortillas stuffed with cheese and other ingredients

Ingredients

400 gm chopped chicken pieces, cooked in masala
A little butter
8 tortillas made of white flour
200 gm grated cheese, melted
1 onion, chopped
½ a bunch of coriander leaves

For the tomato salsa
8 ripe tomatoes, chopped
5 tbsp tomato sauce
4 pods garlic, chopped
A few coriander leaves, chopped
Sugar to taste
4 green chillies, chopped
½ tsp cumin, powdered
4 spring onions, chopped
Salt to taste
1 tbsp olive oil

Preparation

In a bowl combine the ripe tomatoes, tomato sauce, garlic, coriander leaves, sugar, green chillies, cumin, spring onions, salt and olive oil. Cover the bowl with a cling film and refrigerate. This is your tomato salsa.
Heat the cooked meat, mix and keep aside.
Heat an iron pan and grease with butter. Cook one side of a tortilla for 10 minutes in the pan and then over turn. When the tortilla inflates place grated cheese on one half.
Over the cheese some of the cooked chicken, followed by onions, coriander leaves and salsa. Make sure you do not overstuff the tortilla as it becomes difficult to fold it over.
Reduce the flame, cover the stiffed tortilla and allow it to cook till the cheese melts and the tortilla turns brown. Do not let it smoke or burn.
When the cheese has melted fully, overturn the tortilla. When it turns light brown, remove from fire and serve as whole, or in portions. This tastes delicious when served with green salad, guacamole sour cream and salsa.
