Mango passion fruit souffle

Custard makes the best deserts ever. Flavoring them with seasonal fruits and flavoring agents is the ideal way to make some cool seasonal desserts. This mango passion fruit souffle is just the sweetest thing you can serve post lunch this summer season. There is no baking involved while cooking and you wouldn't require any fancy tools either.

Ingredients

For the base

200 gm of powdered digestive biscuits

100 gm butter


For the souffle


6 eggs

9 tbsp sugar

1 can condensed milk

1 1/4 cans of milk

8 tsp gelatin

4 tbsp water

200 ml cream, lightly beaten

1/4 cup passion fruit pulp

1 ripe mango chopped

1/4 cup mango pureed

Preparation

Mix the biscuits and butter in a mixer grinder and spread them on the bottom of the souffle mold

Break the eggs and separate yolk from the egg white

Beat sugar and egg yolks together

Mix condensed milk and milk well

Add this to the beaten egg yolks

Using double boiling technique, boil this mixture until it turns thick

Add soaked gelatin to this custard

Allow this to cool down and then refrigerate until set

Beat the egg whites until stiff peaks form

Take the refrigerated custard out and beat once

Beat the cream and add this to the custard, mix well

Add the beaten egg whites to this and fold gently

Divide this mixture into two parts

Add passion fruit pulp to one part, chopped mangoes and mango puree to the other, mix well
Pour the passion fruit mixture over the biscuit base

Then pour the mango-custard mixture over it

Refrigerate it until set

Garnish with chocolate, strawberries and mango before serving
